Sausage .. Done

Today I processed 20 pounds of sausage. Normally not so bad HOWEVER I made 5 pounds of maple breakfast sasauge first. I hate that sheep gut. Its so fragile. Im a hog guy .. Mid way through Julie wanted me to fix the carpet cleaner grrr. stress on stress. The casings were new they were pretubed. I never used the pretubed before they were the same price and I was surprised when I opened tha package. Anyway same old same old .. hate making fragile sausage.

5 Pounds Maple Links
10 Pounds Hot Italian. 3 pounds in bags and the rest in links
2 2.5 pound summer sausgage

  1. Do you know of any good beginner books on making sausages? I've never done it before but I've got a ton of ground pork in my freezer that could be put to good use. Thanks!

  2. LOL Manfort, I did those casings once myself. We ended up peeling them off after cooking anyway. We weren't too impressed with them.

    Very basic on how to and gear and then specific recipes. I would suggest You Tube also there are some really knowledgeable people out there and you get some great visuals ... they help a lot.

    Next get your first couple mixes pre-made from LEM .. Fleet Farm or Gander Mountain Cabellas have them.. try a few kits before you go off on your own.

    The keys for me are a sink full of warm water you must wash your hands a lot, and semi frozen meat. It grinds way way better it also stuffs better and there is the obvious germ thing.

    I use hog casing (natural is better) and make almost all of it into links. I do this because you can take them from the freezer and boil them quickly to eat. Once boiled you can break them open and fry them into sauce or slap em on a bun with sour kraut! I do fill a couple bullet bags for Julie but the links give you great portion control.

    Smoking is a bit trickier and requires special controlled processes grind and stuff first then if you like it .. mmmm smoke.
